This is an awesome recipe for anytime of year. It is healthy and yummy and is always a hit whenever we take to social gatherings. It is low in calories, fat, and carbs, and high in nutrients.
1/4 Cup - diced green and red bell peppers (you can also use yellow and orange peppers)
1 can (drained) yellow corn
1 can (drained and rinsed) black beans
1 avocado (diced)
1/2 red onion - diced
1 chopped jalepeno pepper (I prefer to use 1/8 Cup of pickled jalepeno, chopped.
Dressing:
Olive oil
Lime juice
Cilantro
Cumin
I don't have measurements for this. I just mix and taste to it is equally balanced.
